Spicy Seared Salmon Recipe on Dill Yogurt Cucumbers

This salmon recipe features a delicious contrast between the hot, spicy salmon filet and the cold, tangy cucumber. The recipe only has a handful of easy-to-prep ingredients, but the finished recipe is full flavored and makes for a beautiful presentation.

Makes 4 Portions of Spicy Seared Salmon Recipe on Dill Yogurt Cucumbers

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 1/2 cups diced English cucumbers (also called hothouse cucumbers)
  • 1/3 cup plain yogurt
  • 2 tbsp chopped fresh dill
  • 1 tsp lemon juice
  • salt and fresh ground black pepper to taste
  • 4 five-ounce salmon filets, skinned, boned
  • 1/2 tsp chipotle pepper
  • cayenne to taste
  • 1 tbsp olive oil
  • 1 tbsp butter

Preparation:

Add the cucumbers, yogurt, dill, lemon juice, and salt to a mixing bowl, and toss to combine. Refrigerate until needed. May be made up to 4 hours ahead of time.

Season the salmon filets generously on both sides with the chipotle, cayenne, salt and fresh ground black pepper to taste. Place a heavy skillet over medium-high heat. When the pan is hot, add the olive oil, and then the salmon filets.

Sear for 4 minutes per side, or until desired doneness is reached. Turn off the heat and add the butter to the pan. Divide the cucumber mixture on to four plates, and top with the salmon. Drizzle a little of the spicy melted butter from the pan over each filet, and serve.
