Seared Scallops with Fava Beans, Bacon, and Mint

Scallops and bacon are great together. Beans and mint are great together. What happens when you put all four together? A delicious, fast and easy, seared scallop recipe!

Serves 4 Portions of Seared Scallops with Fava Beans, Bacon, and Mint

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 slices bacon, diced
  • 1 tbsp olive oil
  • 1 1/2 pound large scallops (about 12)
  • 1 can (15-oz) white beans
  • 1 pound fava beans, shelled, blanched and peeled (may substitute 1 can of lima beans)
  • 1 tbsp chopped fresh mint
  • 1 lemon, juiced
  • red pepper flakes to taste
  • salt and fresh ground black pepper to taste

Preparation:

In a large non-stick pan, cook bacon until crisp. Remove and reserve. Save 1 tbsp of the bacon fat in the pan. Add olive oil to bacon fat, and heat until oil begin to smoke. Salt and pepper scallops and sear in the hot oil for 2 minutes. Turn scallops, cook 1 minute more, and add the rest of the ingredients. Cook until beans heat through and scallops are cooked, about 2-3 minutes. Serve hot with toasted bread.
