- 1/2 cup flour
- 3/4 tsp sugar
- 1 1/4 cup milk
- 3 large eggs
- 1 tsp chopped fresh thyme
- 1 tsp salt
- pinch of fresh ground black pepper
- 1 tbsp lemon zest
Preparation:
Heat 2 tbsp of butter in a sauté pan over medium-high heat. When the butter foams, add the asparagus and sauté for 2 minutes. Transfer the asparagus to a buttered 2-quart casserole dish.
Whisk the remaining ingredients in a bowl to form a light, thin batter. Pour over the asparagus and place in a preheated 350 degree F. oven for 45 minutes, or until the asparagus pie is puffed and browned around the edges, and the center is set. Allow to cool to room temperature before serving.
