Goat Cheese Stuffed Summer Squash Recipe

This recipe is such a great way to use those beautiful, and bountiful summer squash. This goat cheese stuffed summer squash recipe will work with either green or yellow squash, and make a wonderful side dish.

Makes 12 Goat Cheese Stuffed Summer Squash Halves

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 6 green or yellow summer squash
  • salt and black pepper to taste
  • 4 tbsp olive oil, divided
  • 6 oz goat cheese (or your favorite cheese)
  • 1/3 cup plain bread crumbs

Preparation:

Cut the summer squash in half to make 12 rounds. Trim the bottoms slightly if necessary so they sit flat. Using a spoon, or melon baller, scoop out about a 1/4-inch depression in cut side of each squash. Arrange cut side up on a lightly oiled baking sheet. Salt and pepper generously, and drizzle over 2 tablespoons of the olive oil. Crumble a tablespoon of cheese on each squash. Combine the breadcrumbs and the remaining oil, and sprinkle evenly over the tops.

Bake in a 400 degree F. oven for about 20 minutes, or until the tops are browned and the squash tender, but still a bit firm.
