This fried sweet plantains recipe is so easy, and makes for a great change of pace, meat-less meal. Fried, sweet plantains can be served on their own, or as pictured here, with beans and rice for a hearty dinner.

Ingredients:
- 1/4 cup vegetable oil
- 2 ripe plantains (peel should be mostly black),
- salt to taste
- lime wedges, optional
Preparation:
Peel and cut the plantains diagonally into 1/2-inch thick slices. In a large nonstick skillet, heat the vegetable oil over medium-high until it begins to shimmer. Fry the plantains in a single layer over moderate heat, approximately 5 minutes per side, until golden-brown and tender. Drain paper towels, and serve hot with salt and lime, if desired.
